Characterization of digested b-lactoglobulin (BLG) peptides. A, Sodium dodecyl sulphate (SDS)-polyacrylamide gel electrophoresis analysis using a 10 to 20% gradient SDS-polyacrylamide gel. Polypeptides were visualized by Coomassie blue staining. Lane 1, 5 μg of cow's milk protein; lane 2, 1 μg of BLG; lane 3, 1 μg of chymotrypsin-digested BLG peptides; lane 4, 1 μg of trypsin V-digested BLG peptides.
